Combine fresh greens, tomatoes, cucumbers and red onion for a seasonal Greek salad to top with this delicious garlic and lemon vinaigrette. Add feta cheese and Kalamata olives for an extra kick.

1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
2 garlic cloves, minced
2 lemons, juiced
2 teaspoons dried oregano
1/2 teaspoon each salt and pepper
Combine all ingredients in a sealable container (a mason jar is recommended). Shake vigorously before serving (ingredients will naturally separate).
