Key Lime Tartlets

At your Cinco de Mayo fiesta, limes aren’t just for the tequila; whip up these sweet and tart bite-sized treats and please guests of all ages.

Key Lime Tarlets

Yields 60, cut recipe in half for 30

4 packs mini phyllo cups (in frozen section of grocery store)
4 egg yolks
1 can sweetened condensed milk
½ cup lime juice + ½ teaspoon zest of lime
2 Tablespoons powdered sugar

Whipped cream
Key lime slivers

Preheat oven to 375°F.

Hand-whisk egg yolks with sweetened condensed milk, lime juice, lime zest and powdered sugar until smooth.

Line phyllo cups on a lightly greased baking sheet. Spoon mixture 3/4 full into each cup.

Bake for 12 minutes.

Let set and completely cool before topping with a dollop of whipped cream and a key lime sliver.
