Try this zesty sauce atop any grilled meat, or serve as a dip for fresh bread from your favorite bakery.

Heaping ¼ cup of 3-4 fresh herbs (such as oregano, cilantro, parsley and dill)
2-3 cloves garlic
1 heaping teaspoon capers
1 shallot (or ¼ red onion)
½ cup olive oil
Splash of lemon juice
Salt and pepper, to taste
In a food processor, blend all ingredients until smooth, and serve.
