Sweet & Sesame Salad Dressing

Make a simple salad more original with this homemade dressing. It works well with any salad mix – try a spring mix, an arugula/spinach combination or even just plain spinach. Then top with a fruit/nut combination (like apples and pine nuts, strawberries and almonds, or blueberries and walnuts), and add roasted coconut chips, a fun new ingredient available at many grocery stores that adds a great crunchy texture to any salad.

1/3 cup white wine vinegar
4 Tablespoons sugar
½ cup olive oil
3 Tablespoons honey
1 shallot, minced
2 Tablespoons sesame seeds

Shake all ingredients vigorously in a mason jar, and pour over salad greens and toppings of your choice. Toss, and serve.
